How to Make Your Own Fermented Chilli Sauce

Creating your own fermented chilli sauce at home is simple and rewarding. In the video, I share my favorite recipe, tips for achieving the perfect fermentation, and ways to incorporate this sauce into your meals. You’ll learn how to balance heat and flavor, ensuring your sauce complements a variety of dishes.

For the recipe its important to start of by using the correct amount of salt in the fermentation this process is called anaerobic fermentation and this simply means we are removing oxygen from the fermentation process , and allows the vegetables to ferment with out going fizzy , and this is how you do it -

make sure you start with a nice clean sterile jar , this is to make sure there are no bad bacteria at the start of the fermentation process , next put the jar on electric scales and add your peppers and chilli we want to find the weight of the vegetables , now pour cold water on top right up to the top of the jar.

Now pour the water off and calculate 2% of the weight of the water and vegetables , this is going to be the weight of your natural sea salt

i.e. the weight of the vegetables and the water is one kilo , the weight of the salt needed would be 20g

and the salt to the water , whisk till the salt dissolves and pour the salt water back over the chilli mix. put a weight onto to keep the vegetables submerged under the salt solution. Leave a gap in the lid of the jar for the gasses to escape , or you can get special fermentation jars , or you can burp your jar daily , this stops the jar exploding from carbon dioxide building up.

Leave for a week , the liquid will turn white from the natural yeast.

For the Hot Sauce Recipe

  • 2 large cloves of garlic

  • 25g of toasted sesame seed oil

  • 25g soy sauce

  • 25g rice wine vinegar

  • 25g clear honey

  • 500g fermented pepper and chilli

  • quarter of a pint of ferment brine

  • 1 tablespoon gochujang paste ( or to taste )
