Today, I’m excited to share my recipe for **Cinnamon Dusted French Toast**, topped with delicious caramelized bananas, a medley of berries, and a drizzle of pure maple syrup. This dish is sure to impress and make your mom feel loved and cherished.
Why French Toast?
French toast is not only a classic breakfast option, but it’s also versatile and easy to make. The combination of fluffy bread, rich eggs, and warm cinnamon creates a comforting flavor that everyone loves. Ingredients 🍞🥚
For the French Toast:
- slices of thick brioche bread
- 2 large eggs
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon sugar (optional)
- Butter, for cooking
For the Toppings:
- 2 bananas, sliced
- 1 tablespoon brown sugar
- A handful of raspberries
- A handful of strawberries, hulled and halved
- A handful of blueberries
- Maple syrup, for drizzling
Let’s make cinnamon dusted French toast for Mother’s Day
1. Prepare the Batter | In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar (if using). Make sure the mixture is smooth and well combined.
2. Caramelize the Bananas | In a skillet over medium heat, melt a tablespoon of butter. Add the sliced bananas and sprinkle the castor sugar over them. Cook for about 3-4 minutes, or until the bananas are tender and caramelized. Remove from heat and set aside. Alternatively, you can sprinkle castor sugar on top of the banana and use a blow Torch and cook it like a crème brûlée get an adult to do this !!
3. Cook the French Toast | Heat a non-stick skillet or griddle over medium heat. Add a little butter and oil to coat the surface( chef tip - the oil will stop the butter burning 😉) . Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place the soaked bread onto the skillet and cook for about 3-4 minutes on each side, or until golden brown. Turn the heat down if the French toast takes to much colour
4. Plating up | Once the French toast is cooked, place two slices into a bowl and dust with a mixture of castor sugar and cinnamon ( 90% castor sugar 10% ground cinnamon mixed ) place the French toast on a serving plate. Top with the two slices of the caramelized bananas, followed by 2 spoons of Biscoff crumble , a vibrant mix of raspberries, strawberries, and blueberries. Finally, drizzle with maple syrup for that perfect touch of sweetness.
